Hola! This afternoon I decided on making some sushi for lunch!
There is not much to say, so I will get right into the recipe. This sushi has very simple ingredients that you probably habe already or can get at a grocery store.
Ingredients:
2 nori sheets
1 cup of cooked white rice, cooled off
avocado or guacomole
veggies of your choice (i used carrot shredded, cucumber, and lettuce)
Directions
•Lay the nori sheet out on a table or cutting board, place rice on it and flatten it. You can be generous with the rice. •Then spread the avocado on one edge and place the other veggies on top.
•Roll the sushi carefully, trying not to tear the nori sheet.
•Use a sharp knife to cut it into circles by wetting the knife to make it easier!! <- very helpful
Sushi is yum and simple to make. Let me know if you tried it :)

Guten Morgen! I was inspired by a recipe in Loni Jane's ebook and decided to go out and buy some cranberry powder. After searching online and finding extremely high priced cranberry powder on different websites, I decided that I would buy some cranberry jelly for only $0.99 as opposed to $40+ for the powder.
Then this morning I decided to make some delicious looking cranberry
nicecream. The jelly made the icecream a beautiful silver color as opposed to the pink tint the powder gives.
If you are looking for a soft sweet flavored nicecream that is super light yet very creamy, please give this recipe a try.
Ingredients:
4 bananas
4 oz of cranberry jelly (look for a brand that has no added sugar or high fructose corn syrup or artificial flavors)
Using a high powered blender (very important) blend the two ingredients together on medium speed. I find that high powered speeds chop the bananas quick and then throw it on the ides of the blender. On medium speed, the frozen banana doesn't fly to the sides of the blender and it mixes well into the creamy ice cream texture.
I will make a later post about high speed blenders vs. non-high speed blenders.
**If you don't have a high speed blender, then you can add about 1/4cup of water (or dairy free milk, preferably cashew milk for a creamier texture) to help blend the frozen banana much easier.**
Let me know if you try out the recipe below :)

Today I was scrolling through some blogs I havent viewed in a while and I got (re) inspired to do a few things. I am writing them here to not forget:
- Start A Garden. Will give myself an excuse to go outside and spend hours doing something productive.
- Redo My Bedroom.✨ This has been on my summer to-do list every year. And even though I do a little redo each year, I am planning on doing something bigger this year. Maybe use a bit of Feng shui?
- Plan Meals Better. Be smart with money and plan meals to be less wasteful, one of my bad habits.
- SCHOLARSHIPS! Dont get left behind and miss out on opportunities for free money!
- Start A Journal. Write, draw, and get my thoughts together.
- Make More ToDo Lists And Follow Them. ✏️I have a bad habit of writing things down and not looking at them, hehe.
These are the few things on my list so far. Hopefully I can get myself to start these by August 10.
